Super Easy Chicken Quesadillas!

Looking to mix it up in the kitchen? Want to make something with a little kick to it? If so, my chicken quesadillas will be perfect for you! They are super easy to make, and you will definitely want to add them to your menu rotation!

Ingredients:

• 1 pack of tortillas

• 1 lb of chicken breasts

• One green bell pepper

• 1/2 of an onion

• 1 cup of mild chunky salsa

• 1/4 cup of Frank’s Red Hot Sauce

• Salt and Pepper (to taste)

• 1/2 cup of water

• Avocados

Sour cream

• 1 pack of shredded cheese (fiesta blend or mozzarella is good)

Instructions:

Boil your chicken. Then while you wait for the chicken to cool down, chop your bell pepper and onion (I usually dice them). Then add a little oil, water, the Frank’s Red Hot, salsa and your vegetables to a pan. Put your stovetop to low heat. Then shred your chicken with your hands, and add it to the simmering vegetables. Add salt, pepper, and you can also add more salsa if you think it needs more. I personally do not go crazy with salsa, but you go ahead and put as much as you want. Make my recipe your own!

Then use a different pan to make your quesadillas. Grease your pan. Use a plate and add the chicken and vegetables onto your tortilla, and then add cheese to it. There is no rule for how much cheese to use! Then fold your tortilla in half. Place onto pan. Turn the burner to medium heat, and let your tortilla cook for about a minute before flipping. That’s all! I usually use a pizza cutter to cut the quesadillas into thirds. Then I serve them with sour cream, salsa on the side, and avocados!
